Steps
- 1
Mix all Cajun seasoning and set aside.
- 2
Heat butter and oil in pot over medium. Add diced onion and cook 6–8 minutes until soft and lightly golden. Add minced garlic and cook 30 seconds.
- 3
Add rice and toast 1 minute. Stir in 1½ tsp Cajun seasoning. Add 2 cups broth, bring to boil, cover and reduce to low.
- 4
Simmer rice 15–18 minutes. Rest covered 5 minutes, then fluff. This rice will be savory and deeply flavorful.
- 5
Pat chicken very dry. Lightly coat with oil. Press Cajun seasoning heavily on both sides. Let sit 10–15 minutes.
- 6
Heat stainless steel pan over medium for 2–3 minutes. Add oil. Place chicken in pan and don't move it. Cook 4–5 minutes until crust forms.
- 7
Flip and cook another 4–5 minutes until internal temp reaches 165°F.
- 8
Lower heat. Add butter + splash of broth + tiny pinch seasoning. Scrape browned bits and spoon over chicken.
- 9
Toss broccoli with olive oil, salt, pepper, and ½ tsp Cajun seasoning. Roast at 400°F for 15–20 minutes until edges char slightly.
- 10
Plate rice base, slice chicken, spoon pan sauce over top, broccoli on side or mixed in.
